Organic Blu di Capra
Organic Goat Blue Cheese is a cheese from the blue cheese family, made exclusively with Piedmontese goat milk. The cheese is obtained through pre-salting coagulation of the milk, adding different strains of Penicillium molds during the process.
A long process of natural acidification is required to achieve its creamy, semi-soft texture. The salting is done manually, and during the aging period, careful piercing of the forms is performed, giving the cheese its characteristic green veins and a particularly flavorful taste.
The minimum aging time for this cheese is 60 days. It is recommended to enjoy it crumbled on salads, paired with honey or fruit preserves, or used as a bold ingredient in savory dishes.
