Organic Mozzarella Fior di Latte

The organic Fior di Latte mozzarella is a stretched curd cheese made from cow's milk. It is obtained through the mozzatura process, where the cheesemaker cuts a piece of stretched curd from the long ribbon, forming a mozzarella.

The milk is inoculated with lactic bacteria and coagulated with veal rennet. The curd is then left to rest, allowing the acidity to increase further. Subsequently, the curd is immersed in boiling water and vigorously stirred to initiate the "stretching" process. It is then shaped by hand and placed in cold water to maintain the desired form.

 

This organic Fior di Latte mozzarella can be enjoyed cold with tomatoes, in salads, or as part of a vegetable platter. It is also perfect for use in hot dishes. It is recommended to consume it at room temperature to fully appreciate its flavors.
