PDO Taleggio
Taleggio DOP is a soft cheese with ancient origins: first produced in the Val Taleggio valley, from which it takes its name, its historical roots date back to the 10th century. Recognized as a PDO (Protected Designation of Origin) cheese by the European Union in 1988, Taleggio enjoys a protected status that guarantees its authenticity and ties its production to the specific technical and geographical guidelines of its region of origin.
Taleggio DOP is a square-shaped cheese weighing approximately 2.2 kg. It belongs to the "washed-rind" family and is characterized by weekly brushings with salt water, which give it its distinctive rind coloration.
Taleggio DOP delights the palate with a creamy, melt-in-the-mouth texture. It offers a rich, enveloping flavor that is delicately acidic yet full of sweet nuances. It features a soft body that is melt-in-the-mouth beneath the rind, and firmer yet crumbly at the center.
