Baked ricotta, a dairy product with a soft and compact texture, originated to extend its shelf life beyond that of fresh ricotta. Historically, it was placed on metal grates near a hearth, where the smoke from burning wood, used to heat the area, slowly dried the product. 

 

Ideal for appetizers and starters, it comes in variations with Provençal herbs or truffle, as well as aged and firm versions. For an exceptional pairing, enjoy it with a fruity wine like a young Chardonnay to balance its creaminess.
