Bargé from Caseificio Rosso, a Piedmontese specialty, is the traditional tomino for grilling with a bloomy rind. Made with whole pasteurized cow’s milk and aged for only a few days, it has a soft, compact paste of white-straw color, ideal for melting. To contrast and accompany the cheese, Melon Mostarda from Filotto Senga is made according to the traditional Mantuan recipe: candied fruit or vegetables cut into thin slices and immersed in a sugar syrup flavored with mustard essence. Its history is rooted in rural tradition, when people sought to capture the freshness of summer fruits and vegetables to preserve them through the winter. This mostarda is produced in the province of Mantua by a farm that grows and processes its own fruit, with no preservatives or additives—just melon, sugar, lemon, mustard, and the time needed to do things right. The crunchy strips of melon, sweet and slightly spicy, whet the appetite and pair perfectly not only with cheeses such as Ubriaco, aged Bazzotto, or goat cheeses, but also with boiled meats and roasts.

 

Completing the trio is Coppa Lunga della Bassa, a specialty from Terre Verdi, a historic salumificio. This salami is the result of artisanal processing and long aging, which give the coppa its marbled texture, full yet delicate flavor, and natural aroma.
