The Italian Friesian is one of the most common breeds of cattle among the farmers who produce the milk from which Parmigiano Reggiano is made. They are docile, elegant in their body lines and generous in their milk production. We asked Gianni di Tusa, a veterinary, to tell us more about their contribution to cheese quality.
