Fresh Cheeses for the summer: freshness that never goes on vacation
July and August bring heat, outdoor dining, and a craving for simple, quick meals that don't compromise on flavor. It’s the time of year when great aged cheeses gladly make way for something fresher, softer, and more immediate. That is precisely why, for us at Gourm.it, summer is the perfect season to highlight two undisputed stars of our selection, both crafted by the Arrigoni Battista dairy: Stracchino and Primosale.
Stracchino: The freshness of the Po Valley
Stracchino, often called "crescenza", is made from whole cow’s milk and is one of Northern Italy's dairy icons. The name itself reflects its nature: it comes from crescentia, Latin for "to grow," because the cheese softens and expands like rising dough when kept warm. Its soft, creamy texture releases sweet notes of fresh milk, making it incredibly versatile in the kitchen: spread on crostini or rustic bread, melted over a pinsa or piadina with arugula and prosciutto crudo, paired simply with a chilled glass of white wine or a light beer. There's one detail close to our hearts because it speaks to how we work: Arrigoni Battista, the Valtaleggio dairy that produces our Stracchino, has developed techniques like IQF over the years to extend shelf life without compromising freshness. A cheese literally designed to travel well, just like the packages we keep shipping non-stop all summer long.
Primosale: The perfect balance for cold dishes
Why are we talking about this right now?
Because while you pack your bags, we keep packing shipments, we never stop, not even in August. And we like to think fresh cheeses reflect this exact approach: products that, despite their delicate nature, are crafted to reach your table wherever you are, in perfect shape. That is precisely our goal: ensuring our fresh cheeses stay in peak condition all summer long!
