La Marchesa: Three generations of master cheesemakers, a single thread running from the pastures of Campania to the entire world.

There are gestures that never change. 

The hands working the stretched curd, the hot water, the precise motion that shapes the mozzarella: it has been the exact same for three generations. 

Handed down by the Cirillo family, who for over 50 years in the heart of the province of Caserta have been leading La Marchesa, today a benchmark in the production of Mozzarella di Bufala Campana PDO and other buffalo dairy delicacies. 

Yet history, as fascinating as it is, is only the starting point. What makes La Marchesa a company capable of speaking to the world is the way it has combined ancient knowledge with a modern vision—one focused on the supply chain, animal welfare, and the environment.

 

Animal welfare, first and foremost

It all begins in the pastures at the heart of the PDO area, home to La Marchesa's buffalo farms. Here, the forage is grown according to traditional methods designed to ensure authenticity and quality right from the very first step of the chain—because the quality of the milk is built on the welfare of the animal producing it long before it reaches the dairy. 

This approach translates into a short, fully controlled supply chain: from the company-owned pastures to the processing facility, with no intermediate steps that could compromise the product's authenticity. 

Every year, over 10,000 tons of buffalo milk are processed at the Teverola plant, where every single item undergoes more than 100 daily quality checks to guarantee the highest safety and quality standards across the entire supply chain.

 

Innovating while staying true to tradition

This is where La Marchesa truly stands out: a company deeply rooted in the most authentic Campania cheesemaking art, yet decisively looking forward. 

Back in 2008, it founded La Marchesa Bio Energy, the first plant in Campania for generating electricity from biomass. 

In 2015, the facility’s first photovoltaic system was installed, and today every production choice—from farming to packaging—is geared toward reducing environmental impact. Innovation is also reflected in the products: 2017 saw the launch of the Organic line, followed more recently by the Lactose-Free Buffalo Mozzarella, created for those who do not want to compromise on the taste of authentic Campania buffalo mozzarella. 

A company that does not simply settle for the classic recipe, but continuously seeks ways to make it accessible to more people while staying true to PDO quality.

Behind every package from La Marchesa, there is far more than just mozzarella: there is a farming model dedicated to animal welfare, a supply chain fully traceable from pasture to pasture, and a long-standing, concrete commitment to sustainability.
