For this reason, we decided to take our team on a journey to a magical place: the Antica Corte Pallavicina in Polesine Parmense. Here, guided by the legacy of the Spigaroli family, we witnessed firsthand the birth of the King of Cured Meats, understanding why the product we export is not just food, but true ancient art.
In the Floodplain of Taste
Arriving at the Corte, the visual impact is powerful: a 14th-century palace, rescued from the mud and periodic floods of the Po River thanks to twenty years of loving restoration by the Spigaroli family, stands in a fertile and silent land. We had the privilege of closely following the production process of Spigaroli cured meats, a craft that keeps intact the rules and secrets handed down by the Masalén (the ancient master butchers of the Lowlands). The production process of Culatello di Zibello DOP rests on two indestructible pillars: the selection of raw materials and the "summer factor" in the ancient cellars. While processing and casing take place on a continuous basis, the true secret that transforms meat into a work of art occurs during aging: every single Culatello di Zibello DOP, in fact, is destined to spend at least one full summer inside the cellars of 1320, the vault of red gold.
Descent into the Cellars of 1320: The Vault of Red Gold
The most exciting moment of our visit was the descent into the monumental historic cellars, built in 1320 by the Pallavicina Marquises. Crossing the threshold, you are enveloped by an intoxicating aroma, a blend of spices and history: beneath these centuries-old vaults, thousands of culatellos hang suspended in the twilight and the natural humidity of the cellars. Here, there is no room for improvisation: specialized technicians inspect every single culatello one by one, monitoring its aging process step by step. It is precisely through this meticulous artisanal control that the magic happens, transforming a pork thigh into a masterpiece.
The Tasting Ritual: A Unique Sensory Experience
After understanding the hard work, patience, and craftsmanship behind the production, we emerged from the cellars for the crucial moment: the tasting. Savoring Culatello di Zibello DOP, along with all the other Spigaroli cured meats in their place of origin, is a mystical experience. It is the taste of a tradition that once belonged to Giuseppe Verdi (whose trusted butcher was none other than the Spigaroli brothers' great-grandfather) and that has even won over the high European nobility and modern royal courts.
